Ingredients
Ingredients for the base
  • 1 cup almonds
  • 1/4 tsp sea salt
  • 1/2 cup dates (sticky kind)
  • 1/2 cup hazelnut or avocado oil
  • 1 tsp Vanilla
Ingredients for the cheesecake
  • 1 cup water
  • 3 tbsp honey
  • 2 tbsp hazelnut or avocado oil
  • 1/4 cup Fresh Lemon Juice(2 lemons)
  • 1 tsp Vanilla
  • 2 cups cashew nuts
  • 1 cup your favourite frozen berries

Instructions
  1. Soak the cashew nuts in plenty of water overnight. It is very important to soak the cashew nuts for at least 8 hours & then drain and rinse to be ready.
  2. In blender add almonds, dates, salt, 1 tsp vanilla & 1/2 cup oil & blend. Spoon the ingredients in the middle to help to blend well. Fit a baking paper in a cake tin. Add the blended base and spread it in the bottom of the tin. And keep it in the fridge.
  3. Again in the blender add water. Add cashew nuts. Add the lemon juice. Add 2 tbsp oil. Add 1 tsp vanilla. Add honey. And blend well. Spoon into the mixture to help blending well.
  4. Pour half of the mixture over the base and spread evenly. Add the frozen blackberries into the rest of the mixture & blend. And pour over the white layer and spread it evenly. Place it in the freezer for at least 2 hours before serving.
