Ingredients
  • 2 cups Persian or Basmati rice
  • 1/4 cup Oil
  • Salt

Instructions
  1. Soak the rice with 1 heaped tsp salt for 2 hours.
  2. Fill the pot with water and bring it to boil. After boiling add 2 heaped tsp salt in it and mix. Drain the rice & add it to boiling water, do not reduce the heat. Let the rice to cook for 10 minuted uncovered, stir once in a while.
  3. After 10 min, drain the rice and let it sit for 2 min.
  4. Add 2 tbsp oil at the bottom of the pot. Transfer the rice into the pot. Mix 1/4 of oil with 1/4 of water & pour over the rice. Under low heat, let the rice to brew for 30 to 40 min. Wrap the pot lid with a clean towel and cover the pot.
  5. After 30 to 40 min, the rice is ready to serve. To serve it in a nice way, rub some oil to your desired cake mold. Transfer the rice into the mold. With a spoon press the rice until it looks solid. Then turn the mold over the serving plate, hold them firmly.
