Ingredients
  • 20 gram Butter
  • 3 tbsp Plain Flour
  • 1 cup chicken brothor 1 chicken stock mixed in 1 cup water
  • 500 gram chopped leek
  • 2 tbsp cooking cream
  • 1 tsp Black Pepper Powder
  • 1 tsp nutmeg powder
  • Salt to taste

Instructions
  1. Under medium heat, melt the butter with 1 tbsp liquid oil. Then add the flour & saute for few seconds. Then add the chicken broth & stir quickly until mixed. Then add 4 cups of water and stir. cover the pot and let it come to boil
  2. After boiling, add the leek & cover until the leek is fully cooked.
  3. once leek is fully cooked, remove the pot from the heat Take few spoons of the leek and keep separately. Then turn the soup into a puree using a hand blender. Add the black pepper & nutmeg powder & cooking cream.
  4. Bring the pot back on the heat. Add the leek which we kept separately. Add the salt to taste. Cover it and let it simmer for 5 to 10 minutes.
  5. After 10 minutes the soup is ready. To garnish the soup let the soup get cool in the serving plate. So the pcs for garnishing won't sink into the soup. Serve it with freshly baked baguette.
