I am going to share with you the best way that you can cook a rice with crispy bottom which I guarantee if you try it once you will fall in love with the taste. we will get 3 kinds of crispy bottoms with this method. first one is crispy potato bottom, second is flat bread crispy bottom and finally the rice crispy bottom. so let’s start.

Ingredients
  • 200 grams Basmati rice
  • 2 pcs potato
  • Salt to taste
  • Oil
  • 1 piece flat bread

Instructions
To make the potato crispy bottom
  1. add 200 grams of rice in a bowl, add water till it covers the rice, add 2 heaped tsp of salt and mix, keep the rice aside for 40 minutes. place a pot under high heat & fill it with water and bring to boil. once boiled add 1 heaped tsp of salt and stir. drain the rice in the bowl and add it slowly to the boiling water and bring the heat to medium. let the rice to simmer for 10 minutes. stir the rice occasionally during this time. after 10 minutes drain the water and let it rest for 2 to 3 minutes. meanwhile peel off 2 potatos and slice them as you see & add some salt to the slices. place the same pot over the high heat & add 2 tbsp oil in it. place the potato slices in the bottom of the pot. then add the drained rice over it. add 1 tbsp oil and 1 tbsp water over the rice. wrap the pot cover with the clean towel and cover it. let the rice start steaming under the high heat for 2 minutes. once the rice steamed out, bring the heat to low and let it cook for 20 minutes. after 20 minutes the rice is ready. remove it from the heat. to get the crispy bottom on the top of the serving plate use the method you see in the video. place the serving plate over the pot and turn the pot upside down over the serving plate. be careful while turning the pot, you must hole the pot and serving plate firmly so they wont move during the transfer of the rice and as you see you have a beautiful crispy potato with beautiful separated rice under it. just like a cake isn’t it?

once boiled add 1 heaped tsp of salt and stir. 
drain the rice in the bowl and add it slowly to the boiling water and bring the heat to medium.
let the rice to simmer for 10 minutes. 
stir the rice occasionally during this time.
after 10 minutes drain the water and let it rest for 2 to 3 minutes. 
meanwhile peel off 2 potatos and slice them as you see & add some salt to the slices.
place the same pot over the high heat & add 2 tbsp oil in it. place the potato slices in the bottom of the pot. then add the drained rice over it. add 1 tbsp oil and 1 tbsp water over the rice.  
wrap the pot cover with the clean towel and cover it. 
let the rice start steaming under the high heat for 2 minutes. once the rice steamed out, bring the heat to low and let it cook for 20 minutes.
after 20 minutes the rice is ready. remove it from the heat. 
to get the crispy bottom on the top of the serving plate use the method you see in the video. place the serving plate over the pot and turn the pot upside down over the serving plate. be careful while turning the pot, you must hole the pot and serving plate firmly so they wont move during the transfer of the rice and as you see you have a beautiful crispy potato with beautiful separated rice under it. just like a cake isn’t it?
To make the flat bread crispy bottom
  1. the steps are almost the same as the previous rice so add 200 grams of rice in a bowl, add water till it covers the rice, add 2 heaped tsp of salt and mix, keep the rice aside for 40 minutes. place a pot under high heat & fill it with water and bring to boil. once boiled add 1 heaped tsp of salt and stir. drain the rice in the bowl and add it slowly to the boiling water and bring the heat to medium. let the rice to simmer for 10 minutes. stir the rice occasionally during this time. after 10 minutes drain the water and let it rest for 2 to 3 minutes. place the same pot over the high heat & add 2 tbsp oil in it. this time place a flat bread at the bottom of the pot. you can use any shape of flat bread, circle, square, heart or anything. just cut the bread to your desired shape and place it at the bottom. add the drained rice over it. add 1 tbsp oil and 1 tbsp water over the rice. wrap the pot cover with the clean towel and cover it. let the rice start steaming under the high heat for 2 minutes. once the rice steamed out, bring the heat to low and let it cook for 20 minutes. after 20 minutes the rice is ready. remove it from the heat. do the same in order to transfer it to the serving plate. and you end up with the beautifully crisped bread on the top which is the most delicious thing you will ever taste.

To make the crispy rice bottom
  1. add 200 grams rice in the cooking pot. wash the rice under the the running water until the all the dust is clear and the water runs clear. drain all the water and place the pot over the stove under high heat. add 300 ml of water into the rice, please note (for every 200 grams of rice you need 300 ml of water in order to cook it this way) add 2 tbsp oil and salt to taste. stir and cover under high heat until it comes to boil. once it started to boil bring the heat to the medium and cover the pot until all the water is evaporated. after all the water have evaporated, stir the rice and cover it for another 20 minutes under the medium heat till you get a crispy bottom and a cooked separated rice. as you see after 20 minutes rice is ready with a crispy yummy rice bottom.

as you see after 20 minutes rice is ready with a crispy yummy rice bottom.
Recipe Notes

Important Tips:  which is if you are preparing more amount of rice, let the rice to simmer for 15 minutes in the water instead of 10 minutes and when you cover it with the towel to brew it, increase the brewing time between 30 to 40 minutes instead of 20 minutes.

Also add half a glass of water and half a glass of oil instead of 1 tbsp at the time of brewing.
