Ingredients
  • 2 pcs Chicken Breast
  • 1 piece Chopped Onion
  • 1 piece Peeled & Chopped Eggplant
  • 1 piece Grated Zucchini
  • 1 piece Chopped Red Pepper
  • 2 tbsp Sour YogurtAdd Lime Juice if your yogurt is not sour
  • 2 pcs Lightly Beaten Eggs
  • 3 pcs Chopped Scallions
  • 1/2 tbsp Saffron
  • 1/2 tbsp Turmeric Powder
  • 1/2 tsp Red Pepper Powder
  • Salt as needed

  1. In a saucepan add the chicken breast to water and add salt, cover and let it cook completely.

  4. Preheat the oven to 200 to 250 Centigrade or 390 to 480 F. Under medium to high heat, in a frying pan add 3 tbsp oil and start frying the onions.

  5. Once onion starts to get golden add the eggplant and continue to fry. If the eggplant absorbs the oil just add more oil to the pan.

  6. After 5 minutes of frying add the red pepper to the pan and continue to fry;

  7. After 2 to 3 minutes add the grated zucchini and mix and fry for 2 minutes;

  9. Add a glass of water to the pan and mix well
