Ingredients
  • 4 pcs Eggplant (Any kind)
  • 2 tbsp Tahini
  • 1 piece Fresh Lemon Juice
  • 2 cloves garlic
  • 1 pinch Freshly Chopped Parsley
  • 1/2 tsp Cumin Powder
  • 1/2 tsp Red Pepper Powder
  • 1 tbsp olive oil
  • 1 tbsp Plain Yogurt
  • 1 pinch Pomegranate seeds
  • Salt to taste

  5. Using a fork mash the eggplants but don’t over do it as we want the eggplants to have some texture.

  6. Add the fresh lemon juice, cumin powder and red pepper powder and mix.
